Though we made a number of dishes throughout the semester ranging in difficulty and time, this dish - huevos rancheros - was my favorite. The instructions were simple, the dish could be easily altered, and overall it tasted great. I even remade it over thanksgiving break relying solely on ingredients already in my kitchen!
